Pineapple Poppy Seed Coleslaw
3 Cup pineapple FruitBlendz™ pineapple puree
1 ½ C cider vinegar
6 Oz Dunn’s Farm™ maple syrup (sugar or sugar free)
4 ½ Tbl poppy seeds
1 Tbl kosher salt
1 Tbl black pepper
1 ½ Cup salad oil
12 Oz yellow onion
5 Lb bag of shredded cabbage with carrots
Instructions for Pineapple Poppy Seed Coleslaw
Puree the salad oil and yellow onion in a blender. In a large bowl, add the first 6 ingredients in a blender or food processor. Combine onion mixture with the other ingredients. Mix well. Toss with approximately 5 Lbs of shredded cabbage with carrots. Let it sit for 2 hours before service.
